My Current Favorite Lunch — Swiss Chard

Sometimes, lunch ideas come easily for me while other times, I’m blank. Not being a sandwich-sort-of-gal makes it all a bit more challenging. But, right now, I’ve nailed it & it includes Swiss chard! Swiss chard is a new crop for us this year. I’ve never used it much in the past, so it was time to give it a whirl.

All you need is:

  • Sliced onion (I prefer yellow)

  • Cut-up Swiss Chard (I prefer Bacon Farms :)

  • Olive Oil

  • Garlic Salt

  • Farm Fresh Egg (I prefer Owen’s :) from the backyard)

Can you use ALL of the Swiss Chard…you bet! I chop the stems, then curl the leaves & chop the same width all the way up. The key is throwing the stems & leaves in the pan at different times.

Here is my style of recipe:

  1. Chop up vegetables.

  2. Heat about 1 Tbsp Olive oil in a pan on medium heat.

  3. Put in the onions and Swiss chard stems (reserving the leaves).

  4. Sauté until vegetables are softened, about 4-5 minutes.

  5. Toss in the Swiss chard leaves and cook till just wilted.

  6. Season with garlic salt, to taste.

  7. Push all to the side and fry an egg beside (or hard boil it if you prefer).

  8. Sit down with a good book & enjoy a nutritious, sandwich-free/chip-free lunch!
